3 Ways to Keep Your Bakery Goods Looking Fresh

A bakery is one of the best places to find gorgeous, mouthwatering sweets that look as good as they taste… unless your baked goods aren’t looking quite as fresh as they did right out of the oven. Here are a few tips to keep your sweet treats looking fantastic.

Keep Cold Things Cold

Whether you use custom refrigerated display cases or you avoid displaying temperature-sensitive items altogether, make sure your cold items stay cold. If you’re displaying cheesecakes, icebox pies, mousse, trifle or cakes with chilled icings or anything else that needs to be kept cold, display it in a chilled bakery case. Leaving refrigerated foods out at room temperature causes them to develop unsafe bacteria levels, so don’t store cold things out on the counter without some way to keep it chilled. If you don’t have a chilled case, try displaying photographs of cold items instead.

Save Some Garnishes For Last

Fresh garnishes like mint leaves and flowers on cakes tend to wilt after a while, so hold off on them until right before serving time. Other garnishes, like thin chocolate decorations or delicate tuile wafers, are fragile and might break or snap the longer they’re left out; unless you have a way to reinforce them, it’s best to add them at the last second. Whipped cream is another finishing touch that’s best saved for last, as it quickly deflates and melts unless it’s kept very cold. 

Stay Out of Sunlight

Direct sunlight has a way of making colored fondant and icings fade, leaving your beautiful cakes looking dull and drab. Chocolate can easily melt in direct sunlight (even if it’s tempered), so try to keep these decorations away from intense light. The best place to keep your bright, extravagant decorations is in a display case at least a few feet away from windows and lamps — this gives your baked goods plenty of light to illuminate each painstaking detail without making it melt, weep or fade. If you’re storing or shipping specialty cakes, it’s best to keep them in cardboard boxes or other containers until they’re ready to go.

You put a lot of time and love into your bakery goods, so be sure to take the extra steps to keep them looking gorgeous for your clientele.
