Lebanese foods, How to make bulgur kibbeh?
Bulgur kibbeh is one of the most popular cuisine in Lebanon and. Here’s one of the ways to makes this delicious dish:
Ingredients:
500g soft bulgur
500g Lean meat
1 small onion
Salt, pepper and cardamom
Ingredients for kibbeh inside :
Chopped meat
4 large onions
1 cup parsley (chopped)
Salt and pepper
Procedure:
Soak the bulgur for a few hours and then dry it, grind the meat along with the bulgur and onions and then add salt,pepper and cardamom. Knead the ingredients well to form smooth.
For the stuffing in the kibbeh,fry chopped onions with salt,pepper and more spices and add the meat and roast,then add the chopped parsley. Flat a few of mixture of meat and bulgur by hand and then put the meat ingredients in it and wrap. If the material is sticky,it is good to soak your hands in water and then wrap your kibbeh.
Then you can fry the prepared kibbeh in hot oil and serve with everything you want.

One of the good things about bulgur is that,like all wheat-containing foods,it has no gluten. Gluten,a protein found naturally in all types of wheat and barley products,can cause many digestive problems,specifically for those with a weak digestive system or intestine.
Balance the PH level of the body,bulgur is a compact source of fiber that escape from the digestive tract into the small intestine and in the fermented colon,forms short chains of fatty acids. These chains help balance the PH level of the body and prevent the body from becoming too acidic due to the consumption of foods such as sugar,low quality animal products and grains. Studied have shown that people who consume whole grains,including wheat grits and high in fiber,maintain the ideal weight and they are healthier in cardiovascular.
Lebanese food,Tomato Kibbeh :
Ingredients:
1kg tomatoes finely diced
1/2cup fine bulgur
2 medium sized onions,finely chopped
1/3 cup olive oil
1 teaspoon salt
A dash cayenne pepper
4 springs fresh mint
1 tablespoon fine bulgur
1 tablespoon kibbeh spice
Kibbeh spice is a mixture of spices that is unique to southern Lebanon. You can buy it from Middle Eastern groceries or prepare your own blend at home by following the mix below.
1 tablespoon cumin seeds
4 dried edible rosebuds
1/2 teaspoon dried basil
1/2 teaspoon dried marjoram
1/4 teaspoon dried mint
2 black pepper corns
A dash of allspice
Mix together the herbs and spices,use the mentioned amount and store the rest in an airtight container for multiple uses.
Procedure:
Mix the diced tomatoes with 1/3 cup of bulgur (dry). Refrigerate for one hour.
Using the food processor,blend half of the onions,mint leaves,1 tablespoon of bulgur and kibbeh spice. This is called kamouneh.
Mix the reminder of onions with the tomatoes and bulgur.
Add the kamouneh to it and mix it with a fork.
Add the salt and olive oil to the mix.
Place in a serving bowl and garnish with mint leaves. Serve it with pita bread and enjoy.
